MOM'S BROCCOLI-RABBE

Ingredients:   two or three bundles of Andy Boy Broccoli-Rabbe,
                         two or three cloves of Garlic
                         olive oil and hot pepper flakes if you wish

My mom made the best rabbe around.  First you need the right brand of Broccoli-Rabbe.  I only buy Andy Boy.  Do not buy if wilted or if the flowers have bloomed little yellow flowers.  Next, unbundle and soak in the sink in  luke warm salted water.  It then needs to be trimmed.  You want to only keep the leaves and the little stalks around the flowers.  Discard the larger stalks.  In a very large pot ad enough olive oil to cover the bottom of the pot.  Cut one clove of garlic for each bundle you are cooking into small pieces.  Put the garlic in the hot oil.  As soon as it starts to sizzle, take the pot over to the sink, and pick up the still soaking Broccoli-Rabbe and drop it in.  This will make a big sizzle, that's ok.  Keep adding the Rabbe and return to the stove and simmer for about 45 min. or until tender.  You may ad some salt at the end if you wish.  If you like it a little spicy, ad some hot pepper flakes in with the garlic.
